Introduction

This is a standby with our family. I use whole wheat noodles (penne, egg noodles, etc.) and extra lean ground beef (4% fat) so the calories and fat are a bit lower than what is listed here. I also use low sodium tomato sauce and reduced fat ricotta, further lowering calorie/fat content. This is a standby with our family. Ingredients

    1 pound extra lean ground beef
    1 onion, chopped
    1 15 oz. can of reduced salt tomato sauce
    2 C. water
    7 garlic cloves, minced
    1 tbsp. dried basil (more or less to your preference)
    1 tsp. oregano
    8 oz. dried pasta
    1 C. reduced fat or nonfat ricotta cheese
    3 tbsp. grated Parmesan
    1 egg

Directions

Cook beef and onion in a large skillet over med. high heat until meat is browned. Drain any fat (there shouldn't be much).

Stir in tomato sauce, water, garlic, basil, oregano, and noodles. Heat to boiling, stirring. Reduce heat to low, COVER, and simmer 10 minutes.

While the pasta is simmering, mix together the cheeses, egg, and any salt or pepper you wish to add. Spoon cheese topping in mounds over the pasta mixture and cover and simmer for 15 more minutes.

Ready to serve with a green salad for a quick and easy dinner.
