Number of Servings: 6

Ingredients

    1 lb. chicken breast
    2 tbsp. extra virgin olive oil
    2 tbsp. butter
    2 cloves garlic, minced
    1/4 cup flour
    1 tsp. salt
    1 tsp. pepper
    2 oz. white wine
    1/4 cup chicken broth
    1/4 cup lemon juice
    1 tbsp. capers

Directions

Pound chicken breasts between two pieces of waxed paper until thin. Put flour, salt and pepper into large ziploc bag and shake to combine. Meanwhile, heat oil & butter in heavy saucepan. Saute garlic. Add pounded chicken breasts to ziploc bag and shake to coat evenly. Pan fry approx. 4 min per side.

Remove chicken to plate and add wine, chicken broth and lemon juice to deglaze pan. Simmer until reduced by half and stir in capers. Pour over chicken.

    Super tasty! I love that it is much lower in calories and fat than most of the other recipes. I didn't have any white wine so I used apple juice instead, worked great. I have had the full calorie version as well, I thought this tasted just as good. - 1/7/11

    Since I have none, I omitted the wine & added extra chicken broth. This is yummy! I have made it previously, & am glad to now have a lightened version. - 3/27/12
