Introduction

Ingredients

    250g minced pork
    300g hakusai
    2 shiitake
    1 stalk green onion
    10g ginger root
    1T cornstarch
    1t sesame oil
    1 clove garlic
    1/2t salt
    2T soy sauce
    1T sake
    gyoza skins

Directions

Mince everything as small as possible (smaller the better). A food processor works fairly well. Mix all ingredients (except the wrappers). Wrap about a teaspoon of the meat mix in the wrappers so they look like potsticers.

Lightly fry the potstickers in olive oil on a large hot frying pan or griddle. Pour enough water in to reach a depth of about 1/2 - 1 inch. Cover. When water has mostly boiled away, remove cover, allow gyoza to fry until crunchy.

Serve with a sauce of 50:50 mix of soy sauce and rice vinegar and a bare sprinkle of sesame oil.

Makes about 50 gyoza.
