Ingredients

    1/2 cup sugar
    1/2 cup whole wheat flour
    1/3 cup ground flax seed
    2/3 cup oat bran
    1-1/2 tsp. baking soda
    1/2 tsp. salt
    1-1/2 tsp. cinnaon
    2 T. oil
    1 tsp. vanilla
    1-1/2 cups mashed bananas
    1 cup buttermilk
    2 eggs
    4 cups raisin bran
    2/3 cup miniature semisweet chocolate chips

Directions

Preheat oven to 350 and spray 24 muffin cups with ono-stick spray. In a large bowl, combine first seven ingredients. In another bowl, whisk together oil, vanilla, bananas, buttermilk and eggs. Gently mix wet ingredients into dry and stir just enough to mix. Stir in raisin bran and chocolate chips. Stir very gently just to combine. Divide batter between 24 muffin cups. Bake for 20-25 minutes or until done. Makes 24 servings.
