I got inspriation from MARYDAZ and her Quinoa Vegetable fried

Number of Servings: 2

Ingredients

    1 cup uncooked brown rice (or any mixed variety)
    1 C frozen mixed vegetables, any mix
    2 egg
    2 tsp canola oil
    3 tbsp low sodium soy sauce
    1 tbsp rice wine vinegar
    1 tbsp plum sauce

Directions

-- Cook rice according to package

-- Steam frozen veggies according to package

-- Heat up wok or stir-fry pan. Add canola oil to hot pan and then add drained veggies.

--Combine soy, vinegar and plum sauce in a small bowl, set aside

-- Add rice then soy/vinegar/plum sauce mix.

--Stir fry until incorporated

-- Move mixture up sides of wok to make space in the middle of the pan for the eggs. Break into pan and scramble, eventually incorporating into mixture.

-- Season with pepper flakes, salt and pepper or other seasonings as you like.

--This makes 2-3 servings depending on how hungry you are! :)

    YUM!!!
    i didnt have any soy sauce so i used oyster sauce which tasted so good. much better than other fried rice's and much healthier.
