Introduction

Ingredients

    2 lbs diced beef bottom round
    6 C beef broth (reduced sodium)
    4 carrots -chopped
    1.5 C chopped onion
    8 ounces sliced portabello mushrooms
    1 can diced tomatoes
    2 C potato - diced
    .75 C kernels corn (frozen)
    1.5 C green beans- 1/2 inch pieces
    3 cloves garlic-minced
    2 tsp olive oil
    1 tsp black pepper

Directions

heat olive oil and garlic in dutch oven.Brown beef in oil/garlic mixture then add pepper, tomatoes, broth, carrots,onions and simmer on medium-low until beef is tender. Add mushrooms and potatoes and continue to simmer until potatoes are tender.

    Really Good Comfort Food! I was looking for a recipe like I usually make(to check the nutritional info)--this is it! I haven't ever used the mushrooms though, they are a great addition! Thanks! Sooo good! - 1/27/09
