Introduction

Number of Servings: 4

Ingredients

    2-4 cups Brown Rice
    1 Can Black Beans, strained and rinsed
    1 Can diced tomatoes, drained
    Salsa
    Seasoning

Directions

1. Cook brown rice to directions on box
2. Once cooked, add black beans and tomatoes
3. Add salsa and any seasoning you would like (I use garlic powder, crushed red pepper, and spicy red pepper)
Cook together for a few minutes (until heated through and the flavors meld a bit)
4. Serve!!!

Each serving is one cup. The amount depends on how much rice you use.

**Note: If you stick to a lower amount of rice, the recipe tends to be healthier.

    2-4 cups brown rice, one can of beans and 1 can diced tomatos all for 1 serving? I don't think so. I'm planning on trying it however just not eating it all in one setting... Will try adding some extra vegis and putting it into a pita for a sandwich. - 10/16/08

    Very Good
    I used diced tomatoes with jalapenos with this, and spanish style tomato sauce instead of salsa...came out delish and had a kick to it! - 10/7/08
