Introduction

Ingredients

    Chicken Breast, boneless, skinless, 24 ounces
    Sara Lee, Delightful White Bread, 4 slices
    Egg white, 1 serving large
    Buttermilk, lowfat, .5 cup
    salt and pepper to taste
    Cooking spray

Directions

Soak 4 large boneless, skinless chicken breasts in buttermilk for at least 2 hours in fridge. Bake bread at 250 degrees for 30 minutes and then leave in oven for another hour with heat turned off. Drain chicken and then pulse toasted bread in food processor until it forms crumbs. Add salt and pepper. Dredge chicken in egg white and then in toast crumbs. Place chicken on a rack fitted into a baking sheet. Coat with cooking spray. Bake 30-35 minutes, turning over after 20 minutes.
Tip: Lining the pan with parchment paper makes clean-up a snap!
