Introduction

I whipped this recipe up by going by other pancake recipes but this recipe has added fruit and whole grains. No added sugar either. Very Nutriuous. And My Picky son loved it. Ingredients

    1 cup whole wheat flour
    1 cup old fashioned quaker oats
    2 tsp baking powder
    2 cups fat free milk
    1 egg
    1 large Banana
    1/2 cup frozen organic blueberries

Directions

in bowl add flour, oats and baking power
set aside

pulse milk, egg, blueberries, and banana in blender and blend till mixed thoroughly and fruit is not chunky.

add wet ingredients to dry and stir til well mixed

Heat skillet over medium heat. Spray with cooking spray. Pour pancake batter by 1/4-cup portions onto heated griddle.

makes about 8-10 pancakes 4 inch diameter.

    These were easy to make and very good! I had 1/2 cup of strawberries and a glass of orange juice with it. Very filling! - 4/10/10
