Ingredients

225g Raw prawns, shelled
170g Spaghetti
6 tbsp extra virgin olive oil
2 cloves garlic, finely diced
1 tsp chilli flakes, or to taste
25g unsalted butter
juice of 1/2 lemon
Large handful fresh parsley leaves, finely chopped
Freshly grated Parmesan cheese
Directions
clean the prawns by running a nife dwn the length of their backs and pulling out their dark digestive thread. Rinse under cold water and pat dry. set aside.
Drop the spaghetti into a pan of boiling, salted water. Cook until al dente, according to the packet instructions.
Shortly before the spaghetti is ready, measure 3 tbsp olive oil into a non-stick frying pan. Set over a high heat. Season the prawns with salt and pepper, and stir-fry briskly for 3 minutes, or until cooked and pink through. Remove to a bowl and allow the frying pan to cool down.
Add 3 tbsp olive oil to the frying pan,along with the chopped garlic and chilli flakes. set over a low heat so that the infuse into the oil.
As soon as the spaghetti is cooked drain into a colander and return to it's saucepan. Mix in the butter and a generous twist of freshly ground black pepper. Reheat the prawns in the frying pan, season with lemon juice and chopped parsley, and mix in the spagetti, serve immediately with grated parmesan.
