Ingredients

    2-3 small mashed, ripe bananas
    1/2 cup applesauce
    1/2 cup plain yogurt
    3 egg whites
    1 tsp vanilla
1/4-1/2 cup sucanat, raw sugar, honey, or your favorite sweetener
1 cup 100% whole wheat flour
1 cup oat flour (or white)
    1/4 cup ground flax meal
    1/4 cup wheat germ
    2 Tablespoons flax seed
    1/2 tsp baking soda
    1/2 tsp baking powder
    1/4 tsp salt

Directions

Preheat oven to 375 degrees. Coat standard muffin pan with butter flavored cooking spray and set aside.

In large bowl, combine bananas, applesauce, yogurt, egg whites, raw sugar or sweetener, and vanilla extract until well blended.
Add flours, wheat germ, flax meal, flax seed, baking soda, baking powder and salt. Stir until combined.
Divide batter into the 12 greased muffin cups.
Bake in preheated 375 degree oven 16-21 minutes, until done.

The flax meal causes the muffins to brown faster so watch closely.

Makes 12 muffins.

Absolutely delish. I followed the recipe exactly (except that I did succumb to the desire to add 1/2 cup of chocolate chips - nuts would also be good but alas both add calories). - 6/21/10
