Ingredients

-1 head of cauliflower
- 1/2 cup reduced fat sour cream
- 1 tsp. chicken boullion
- 1/4 cup fat free half and half
- sprinkle top with fat free cheddar cheese (about 1/4 cup)
- season to taste with salt and pepper
- sprinkle top with paprika
Directions
- Preheat oven to 375 degrees
- cook cauliflower to a VERY SOFT consistancy
- drain well
- using food processor or mashed potato masher to turn the cauliflower to a mush-like consistancy
- add creams slowly as you mix ** the dish may take a bit more or less of the half and half and sour cream, depending on the size of the cauliflower
- Add chicken boullion seasoning
- Add salt and pepper to taste
- Spray an oven-proof dish with cooking spray, then transfer the liquid mixture to the dish
- Press down into dish
- Sprinkle top with cheese, then paprika
- Bake covered for 10 minutes, then uncovered for 5 minutes
- Makes about 10-12 servings
** I made this dish at Thanksgiving last year, and everyone LOVED it! It was a veggie side dish (I didn't try to "trick" anyone into thinking it was potatoes, for this dinner, I sometimes leave the cauliflower a little more lumpy as well. YUMMO!
