Introduction

Quick and easy breakfast that will make vegetarians and non happy. Good for a split household like mine. Quick and easy breakfast that will make vegetarians and non happy. Good for a split household like mine.
Number of Servings: 2

Ingredients

    2 cups hashbrowns
    1 cup egg substitute
    1/2 cup onions, chopped
    1/2 cup cheddar cheese, shredded fine
    1 T olive oil

Directions

Brown onions in olive oil, just until soft. Add hash browns and cover. Cook until hash browns are almost done, add egg and stir completely, until egg is almost done. Then add cheddar and stir until melted, remove from heat and serve.

Makes two one cup servings.
