Mary Ann (that's the one & only from Gilligan's Island)... had a great recipe! Ever wonder where she got all the supplies to keep making those coconut cream pies?! I got this recipe many years ago from the TV guide. it's been a family favorite ever since...usually it's strictly a Christmas treat. Ingredients

Filling:
3 Egg Yolks
Dash of Salt
3/4 cup Sugar
3 cups Milk (Naturel Lactose Free)
2 tbsp. Butter or Margarine (Becel RSF)
1/2 cup Cornstarch
1 cup Coconut, shredded
1/2 tsp. Vanilla extract
1 baked 9-in. Pie shell OR 1 graham cracker crumb ready made pie shell

Meringue:
3 Egg Whites
1/4 tsp. Cream of Tartar
6 Tbsp. Sugar
Directions
In the top of a double boiler over simmering water, beat egg yolks and salt. Add the sugar, milk, and butter. As soon as the bottom pot boils, mix the cornstarch with a small amount of water. Add it to the egg yolk mixture a little at a time. Cook until think, stirring constantly with a wire whisk. Add the coconut and vanilla. Pour filling in the baked pie shell. In a bowl, beat egg whites with cream of tartar until soft peaks form. Gradually beat in sugar, about 1 tbsp. at a time, stiff peaks form. Spread meringue over pie. Garnish with coconut. Bake at 375 deg. F for 8 - 10 minutes until lightly browned.
