Number of Servings: 4

Ingredients

    One pack of thin sliced skinless chicken (approx. 1 lb)

    Approximately 1cp. of Shredded part-skim mozzarella

    Sauce:
    1 tbs. olive oil One can of crushed tomatoes
    2 lg carrots (steamed 10-12 minutes, then pureed with a little water)
    garlic (1 clove)
    season to taste

    Bread Crumbs:
    2 slices pepperage farms light 7 grain bread
    1/4 c. hodgson mill wheat bran
    1/4. sliced almonds
    1 tbs. ground flax seed
    1/2 tsp. salt
    season to taste (oregano, rosemary, etc)


Directions

Preheat oven: 350 degrees

Prepare Sauce: Steam carrots for 10-12 minutes, then puree with a little water until creamy.

Sauce pan, heat Olive Oil (or substitute for cooking spray, which reduces calories). Saute garlic lightly. Add one can of crushed tomato, fresh basil, parsley, rosemary, and oregano. Add carrot puree.


Clean chicken with water and cut off any veins or fat. Place aside in a bowl.

Prepare breadcrumbs by combining all ingredients in a food processor or blender. Pulse, do NOT puree!!

Dip wet chicken into bread crumbs (no egg necessary!) then place in a corning dish which has been layered with sauce.

Add sliced mozzarella (part-skim), seasonings, and light sauce. Cook for 20-25 minutes (thinly sliced chicken), or until cheese is melted, and chicken is completely cooked.
