Ingredients

    1 large red bell pepper
    1 cup brown rice
    1 link aidells portabello mushroom chicken/turkey sausage
    0.25 cup chopped onion
    3 large mushrooms
    2 oz fat free cream cheese
    0.5 cup salsa
    salt and pepper to taste

Directions

Cook brown rice according to package. While waiting, cut red bell pepper down the middle lengthwise and remove seeds. Also, chop and saute the onion, mushrooms, and chicken sausage link. Once the rice is cooked, stir in onion, mushrooms and chicken sausage. Add cream cheese and salsa and stir. Cook red pepper halves in boiling water for about 2 minutes, then remove and place in oven pan. Scoop rice mixture into each pepper half. Cook on 375 degrees for about 25 minutes. Makes 2 servings, but you will probably have extra of the rice mixture leftover to snack on later! Cooking time will take a bit more than an hour due to the length of time the rice takes to cook.
