Ingredients

    2 doz. large shrimp or 1 lb medium shrimp, peeled & deveined
    3 cups cooked brown rice
    1/2 tsp ground cayenne pepper
    1/2 tsp freshly ground black pepper
    1/2 tsp salt
    1/2 tsp crushed red pepper
    1 tsp dried basil leaves, crushed
    1/2 tsp dried oregano leaves, crushed
    1/4 cup Smart Balance buttery spread
    1-1/2 tsp minced garlic
    1 tsp Pickapeppa sauce (or Worcestershire sauce)
    1/4 cup dark beer
    1 large tomato diced coarsely

Directions

In small bowl combine seasonings. Combine buttery spread, garlic, Pickapeppa sauce and seasoning mix in a large skillet over high heat. When the buttery spread is melted, add tomato, then the shrimp. Cook for 2 minutes, stirring evenly. Add the beer; cover and cook another minute. Remove from heat and spoon over rice.
