Introduction

You can substitute 1 c. of applesauce for the oil to make this a healthier treat. You can substitute 1 c. of applesauce for the oil to make this a healthier treat.

Ingredients

    2 c. whole wheat flour
    2 c. white flour
    2 c. granulated sugar
    2 tsp. ground cinnamon
    2 tsp. baking soda
    1 tsp. salt
    16 oz canned pumpkin
    1 c. vegetable oil
    2 eggs
    2 TBS. milk
    2 tsp. vanilla extract
    1 c. semisweet choc. chips

Directions

In a mixing bowl, combine flours, sugar, cinnamon, baking soda and salt. Add pumpkin, oil, eggs, milk, and vanilla; beat on medium speed until mixed well. Stir in choc. chips. May need to add in 2 TBS. or more of water to thin out batter. Spray muffin pan with non stick spray and drop by large TBS. into each hole. Bake at 375 degrees for 13-15 minutes or until edges begin to brown. Cool for 2 minutes; remove to a wire rack to cool completely.
