Introduction

A good way to use up leftover roast beef and vegetables. A good way to use up leftover roast beef and vegetables.
Number of Servings: 2

Ingredients

    1 tbsp olive oil
    7 oz leftover roast beef, cubed
    1 large roasted potato, cubed
    1/3 cup cooked carrots, diced
    1/2 med onion, cooked and diced
    1/3 cup beef gravy
    Seasoned salt, sage and Mrs. Dash or pepper to taste.

Directions

Heat oil over med heat in a skillet.
Add beef, cook until slightly browned
Add potatoes, carrots, and onions.
Add spices and gravy.
Cook until hot throughout.

You may add water if gravy is too thick.

If you don't have leftover vegetables you can use fresh and cook them in the oil first before adding the beef.
Serve with bread if desired.

    Sometimes the leftovers are the best. I'll make sure there is enough for leftovers from the Sunday roast, so I can come home to this easy, hearty meal on a weeknight. - 2/6/10
