Deceptive in the nature of the ingredients, this rich, delicious lunch is everything you could ask for as a poor student! Heck, with a trip to the residence cafe, it COULD be "all that and a bag of chips"! Adapted from Happy Herbivore's blog.

Ingredients

    19 oz black beans, drained and rinsed
    1 cup hot, chunky salsa
    1 1/2 cups vegetable broth
    1/2 tsp each cumin and oregano
    1/2 tbsp garlic powder
    hot sauce as desired (I love my hot sauce!)

Directions

Place 1 cup of the beans, salsa, broth, cumin, oregano and garlic powder in a blender.
Puree until smooth.
Transfer to a saucepan.
Add remaining ingredients, stirring to combine.
Heat thorougly over low, and serve.
This is also easy to do in the microwave, and freezes well.
