Ingredients

    4 - Cream Cheese,8 oz blocks
    Graham Crackers, plain, 2.25 cup, crushed
    Butter, unsalted, 1 stick, melted
    Sour Cream, 1 cup
    Vanilla Extract, 2 tbsp
    Granulated Sugar, 1 cup
    Egg, fresh, 2 large
    Corn Starch, 2 tblsp

Directions

Mix melted butter, 2 tblsp sugar and graham crackers together and press into spring form pan on bottom and sides. Put into freezer while preparing the filling. Mix Cream Cheese and remaining sugar until smooth. Add eggs, vanilla, and cornstarch until smooth and creamy. Fold in sour cream just until mixed in. Pour into graham cracker crust. DO NOT OPEN OVEN DOOR UNTIL DONE BAKING. Bake at 425 degrees for 10 minutes, then reduce heat to 200 degrees for 45 minutes. This step is very important for creaminess...turn the oven off but leave the cheesecake in the oven for 3 hours with the door slightly open. Then chill for at least 3 hours in refrigerator. Makes 16 servings.
