Ingredients

    1 10 oz. pkg. of frozen spinach, thawed & drained
    1 cup frozen baby artichokes, thawed
    1 clove garlic, minced
    1 cup non-fat cottage cheese
    1/2 cup nonfat cheddar cheese, shredded
    3/4 cup Egg Beaters, or other egg substitute
    salt & pepper to taste

Directions

Mix all ingredients well. Pour into 9" pie plate, sprayed w/ non-stick spray.

Bake @ 350 for 45 minutes or until set.
