Introduction

I found a recipe similar in a cookbook, but I changed a few things and made it a low calorie and low fat enjoyable Thanksgiving or anytime dessert. The best part no measuring! Ingredients

    24 gingersnap cookies
    12 ounces of reduced fat or low fat cream cheese
    3/4 cup sugar
    1 tablespoon corn starch
    1 teaspoon pumpkin spice
    1/2 cup eggbeaters
    2 cups of canned pumpkin
    1/3 lite corn syrup

Directions

Take 24 paper or foil baking cups place in a muffin pan or baking sheet. Place 1 gingersnap cookie in the bottom of each cup. Beat the next four ingredient until blended. Then add eggs and blend well. Then add the remaining ingredients and beat for 1 minute or until blended. Fill the cups evenly and bake for 30 to 35 minutes in a 325 degree oven. Chill and enjoy!
