Introduction

Ingredients

Cooking spray
16 oz frozen spinach (can do upto a 16 oz)
1 eggs
3/4 c eggbeaters original
4 - 5 cloves, garlic, minced
1 lb cottage cheese, non fat
.5 t salt
1/4 t grd nutmeg
1 lrg lemon's worth of juice
1 c italian seasone panko breadcrumbs
pepper
paprika
Directions
Preheat oven to 375.
Spray 8x11 baking dish w/cooking spray.
Beat eggs in a lrg mixing bowl. Add spinach (completely defrosted and squeezed dry), garlic, cottage cheese, salt, nutmeg, lemon juice, 3/4 c breadcrumbs and pepper. Stir well. Transfer to the baking dish and smooth into corners. Top remaining 1/4 c breadcrumbs and paprika. Cover with aluminum foil.
Bake for 35 minutes. Remove foil and bake an additional 10 minutes.
Cut into squares and serve.
