Introduction

My kids only eat fish if I fry it, so this was my way of reducing the caloric intake and still making it likeable for my little guys. It is really good! Ingredients

    Atlantic Salmon (fish), 1.75 oz
    Yellow Cornmeal, 1.5 cup
    Pepper, black, 1 tbsp
    *Extra Virgin Olive Oil, 1 tbsp
    Egg, fresh, 2 large
    *Soy Sauce, 1 tbsp
    *Lemon Juice, 1 tbsp
    Garlic, 3 cloves

Directions

Mix in baggie Soy sauce, lemon juice and finely grated garlic
Add fish and seal
Marinate in refrigerator 30 mins
Mix cornmeal and pepper in large mixing bowl
In smaller mixing bowl beat eggs
Dip fish in egg and coat with cornmeal
Heat olive oil over medium heat in frying pan
Fry fish for about 2 mins on each side
