Introduction

A wonderful side dish to ham or pork! A wonderful side dish to ham or pork!
Number of Servings: 10

Ingredients

    1-20 oz can of crushed pineapple with juice(unsweetened)
    1/2 C sugar
    2 med eggs(beaten)
    1/8 C corn starch(I use 2 Tablespoons)
    1 tsp vanilla

Directions

Mix the cornstarch well with the sugar and set aside. Beat the eggs and add the vanilla and pineapple. Slowly stir in the sugar mix and place in a greased casserole dish. Sprinkle with cinnamon and bake at 350 for 1 hr. Serve warm, I have it serve 10 as we use it more like a condiment than an actual side dish. But, even if you serve 5 with it, the numbers are still low! Enjoy!

    Incredible!
    It was weird putting this together and I wasn't sure if anyone would enjoy it. But it was SUPER! They ate it all and want it again. GREAT, easy, healthy recipe. I put in a 13x9 pan and baked about 30 min to save on time. It even smelled great while baking! - 11/4/15
