A wonderful side dish to ham or pork! A wonderful side dish to ham or pork!
Number of Servings: 10


    1-20 oz can of crushed pineapple with juice(unsweetened)
    1/2 C sugar
    2 med eggs(beaten)
    1/8 C corn starch(I use 2 Tablespoons)
    1 tsp vanilla


Mix the cornstarch well with the sugar and set aside. Beat the eggs and add the vanilla and pineapple. Slowly stir in the sugar mix and place in a greased casserole dish. Sprinkle with cinnamon and bake at 350 for 1 hr. Serve warm, I have it serve 10 as we use it more like a condiment than an actual side dish. But, even if you serve 5 with it, the numbers are still low! Enjoy!

  • It was weird putting this together and I wasn't sure if anyone would enjoy it. But it was SUPER! They ate it all and want it again. GREAT, easy, healthy recipe. I put in a 13x9 pan and baked about 30 min to save on time. It even smelled great while baking! - 11/4/15
