Introduction

This is a staple in our household. All measurements are approximate and feel free to adjust to your taste. I like to marinate it for a couple hours but should be at least 30 minutes. Very flexible. Ingredients

    Approx 1/3 cup balsalmic vinegar
    Approx 1/3 cup olive oil
    2-3 tbs dijon mustard
    3 cloves garlic, diced
    2 boneless skinless chicken breasts, cut in half
    pepper, a small palmful
    2 sprigs fresh thyme (optional)

Directions

In a ziploc bag or bowl, combine all ingredients except the chicken. Mix well and add chicken. Marinate for at least 30 minutes.

In a medium pan, empty contents of bag or bowl, including all of the marinade. Cover and cook over med heat for 20 minutes or until the chicken is cooked through, turning occasionally.

Makes 4 servings.

    My son and husband actually liked this recipe but I wasn't very fond of it. They gave it a 4 and I gave it a 2. I'm looking forward to trying some of your other recipes though. - 3/9/12
