This my take on comfort food Recipe submitted by SparkPeople user SAMARIAD1. Seasoning was great. Low sodium. Makes two hearty servings for South Beach type healthy menu. Ingredients

4 cups of fresh Cauliflower, cut in small flowerettes &/or slice into 1/4 inch slices.
1/3 cup Lite Sour Cream
1 TBS dehydrated onion
1 TBS dehydrated garlic
1 tsp dried of thyme or oregano
No added salt
1/4 cup shredded mozarella
PAM Spray
Directions
Preheat oven to 350 degrees.
8X8 Pyrex dish, sprayed with PAM.
Measured Lite Sour Cream into center of Pyrex dish.
Add dehydrated and dried seasoning, and stir to moisten.
Wash and cut cauliflower into small pieces as listed; measure in 4 cup measuring device.
Add the cauliflower to the Pyrex dish and stir to coat with the sour cream and seasonings. Spread evenly in the dish.
Cover tightly with aluminum foil.
In 350 oven or until veggie is fork tender. Then add the grated cheese., sprinkle evenly.
Return to oven without the foil cover.
Bake another 5 minutes to melt cheese and allow to brown slightly.
I had problems with it getting too dry.
SAMARIAD1 reports that sometimes there is excess moisture that needs to poured off before serving.
