Ingredients

4 large potatoes
3 cups broccoli, chopped
Cream of onion soup (Healthy Request)
1/4 cup bacon bits
1 cup shredded cheddar cheese
1 tbsp dry ranch dressing mix
1 tsp salt
1 tsp black pepper
Directions
1) Preheat oven to 400 F. Rinse off potatoes and rub the skin with butter (or use cooking spray). Wrap in aluminum foil, puncture with a fork, and bake in oven for 1 hour, or until insides are tender.
2) Unwrap potatoes from foil and briefly allow them to cool. Slice off the top fourth of each potato and scoop insides into a large mixing bowl, breaking up any large pieces, and keeping skins as intact as possible. Arrange skins in a baking dish.
3) Mix potato with broccoli, soup, bacon bits, cheese, ranch powder, salt and pepper. Fill each skin with 1/4 of the mixture, packing it in, and piling high until all of the mixture is used.
4) Sprinkle the tops of the potatoes with a little shredded cheese and bacon bits. Bake for 15 minutes and serve.
