Ingredients

2 med sweet potatoes, peeled
2 lg cooking apples
1 pound turkey ham, cubed
1 lg onion, shopped
1/2 C apple juice or apple cider
2 T brown sugar
2 T maple syrup
2 T lemon juice
1/2 C raisins
1/2 t cinnamon
1.2 t allspice
Topping:
2 C cornflakes, crushed to equal about 1 C
3 T melted butter
1/2 t paprika
Directions
Preheat oven to 375 degrees. Peel sweet potato and boil until just barely tender. Cut potato into 1/2 inch slices. Chop onion and pan fry until just tender. Quarter and core apples. Combine all ingredients ((except cornflakes, butter, and paprika)) and place in a 9 x 13 prepared pan. Mix crushed cornflakes with melted butter. Add paprika and mix well. Sprinkle top of casserole with mixture. Bake uncovered for 40 minutes. Just delish with a fresh green salad and some chewy bread!
