Ingredients

    Pastry for two-crust 9-inch pie
    1 egg white, beaten
    20 RITZ Crackers, coarsely broken
    20 saltine crackers, coarsely broken
    1 1/3 cups water
    1 cup sugar
    1/2 cup brown sugar
    2 tsp cream of tartar
    2 tbsp lemon juice
    1 tbsp lemon zest
    2 tsp butter
    1/2 teaspoon ground cinnamon

Directions

Preheat oven to 425F.
Line a 9" pie plate with half the pastry.
Brush with beaten egg white, then place the cracker pieces in the crust and set aside.
Heat water, sugars and cream of tartar to a boil and simmer for 15 minutes.
Add lemon juice and peel, cool completely.
Pour syrup over cracker crumbs.
Dot with butter and sprinkle with cinnamon.
Top with remaining pastry, slit steam holes into the "lid".
Bake 30 to 35 minutes or until crust is crisp and golden. Cool completely before serving.

    This is so very good! I have done this, however, with all saltines and it is still heavenly...no one has ever been able to tell it was not real apple pie! >:D< - 11/23/08
