Introduction

This is a wonderful raw relish - I eat it out of a bowl, it's so good! This is a wonderful raw relish - I eat it out of a bowl, it's so good!

Ingredients

    3 cups whole cranberries (one bag, washed and picked over)
    1 whole orange - cut into 8ths and remove seeds (leave the peel on)
    1/2 cup granulated sugar
    5 oz. walnut pieces

Directions

Wash and pick over the cranberries. Cut the orange into 8ths and remove seeds, but leave the rind on the orange.

Put the orange into a food processor and process till chunky. Add the cranberries and sugar, and process until the cranberries and very roughly chopped. Add the walnuts and process until the relish is smooth but still chunky.

Yield: About 4 cups
16 servings (1/4 cup per serving)

    I used this recipe last year for the holidays. I loved it, the flavor was so fresh. I now make it as a side anytime I make turkey sandwiches and put it directly on the sandwich instead of mayo. I freeze leftovers in 1/2 cup containers so that I always have some handy. - 6/12/11

    I make a very similar recipe. When I want to cut some of the sugar calories I use an artifical sweetner. I've not used walnuts, so this might be something to try for this year. Thanks for posting this. - 11/15/11
