Ingredients

Meatloaf muffins:
1.5 lb lean ground beef (preferred to extra lean)
3/4 c oatmeal (can use dry bread crumbs as well)
160 ml 1% milk (or canned milk)
1 egg
1/4 cup fiber one cereal crushed
1 tsp chili powder
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
Barbecue Sauce:
1 cup light ketchup (I use blue menu)
1/4 cup chopped onion or 1 tsp onion powder
2 Tbsp brown sugar
Optional: 1/2 tsp hot pepper sauce
Directions
1. Meat loaf muffins: In a large bowl, combine ground beef, oatmeal, bran, milk, egg, chili powder, garlic powder, salt, and pepper. Divide mixture evenly among muffin cups, pressing down lightly.
2. Barbecue Sauce: In another bowl, combine ketchup, onion, sugar and, if using, hot sauce. Spoon about 1 Tbsp sauce over each muffin.
3. Bake in preheated oven for 25 to 30 minutes or until meat is no longer pink in centre.
Makes 12 muffins (if using regular tin) or 6 muffins using Jumbo tin. Serving size is either 1 jumbo muffin or 2 regular sized.
