Introduction

This is a flavorful dish that fills you up. I tried cutting down on sodium, but boosting flavor by using no-salt seasoning on the chicken, and other herbs on the veggies. It's super easy to make. Ingredients

    3 sprays-Pam cooking spray
    1 cup- fresh mushrooms sliced
    1/2 cup- onion chopped
    2 cloves- garlic/ chopped or minced
    1 tbsp- dried basil
    1 tsp- paprika
    2 cups- fresh spinach
    1oz- Dubliner Irish Cheese

    1- chicken breast (4.5oz after cooking)
    4 tsp- Kirkland Organic No-Salt Seasoning

Directions

Vegetable Prep
1. slice mushrooms
2. mince garlic
3. chop onion
4. measure out spinach

Cooking Vegetables
1. spray pan w/Pam
2. add mushrooms, stir frequently
3. add all seasoning, basil + paprika +garlic
4. once mushrooms begin to reduce in size and release juices, increase flame to med-high to evaporate liquid. keep stirring frequently.
5. add spinach and stir to incorporate. cover pan and let cook for 1 min. uncover and stir.
6. veggies are done when spinach is cooked.
7. remove from pan
8. grate/shred 1 oz of cheese over warm veggies

Meat Prep
1. defrost chicken breast
2. slice into thin fillets (approx 3/8" thick)
***you can get three fillets out of one breast
3. season on both sides with No-salt Seasoning
4. cook on med-heat in same pan used for veggies.
5. cook on one side for 3 minutes
6. flip chicken over and cook uncovered for 1 min.
7. cover and cook for 5-7 min.
8. check to make sure chicken is cooked.
9. enjoy
