Ingredients

4 each Pork Loins
2 Tbsp Butter
1 Cup Heavy Whipping Cream
1/2 Cup Sour Cream
1 1/2 Cups Mushrooms, Sliced
1 each Medium Onion, Thinly Sliced
1/2 Cup Parmesan Cheese
2 Tbsp Plain Brea Crumbs
1/2 Cup Mozzarella Cheese, Shredded
2 Cups Cauliflower, fresh or thawed
Directions
Preheat oven to 375F.
Season Pork with salt and pepper on both sides. Sear in butter over medium heat until golden on both sides. Remove from pan.
Add sliced onions to pan and cook until softened and they have developed a little color. Add the mushrooms and cook until they have released their liquid and are starting to brown.
Add the heavy cream to the pan and remove from heat. Add the sour cream and whisk to combine. Return to heat and heat to simmer and it starts to thinken.
Place cauliflower in the bottom of a casserole dish and top with mozzarella cheese.
Place the pork loin on top and pour the sauce over all of it.
Combine Parmesan Cheese and Bread Crumbs. Sprinkle over the top.
Bake about 30 minutes, or until golden brown and bubbly. Let sit about 5 minutes before serving.
