Introduction

This is a soft type sugar cookie that is not too sweet. Best frosted!! This is a soft type sugar cookie that is not too sweet. Best frosted!!

Ingredients

    6 tbs extra firm tofu
    1 cup dairy free buttery spread
    2 tsp vanilla extract
    1 cup sugar
    2 1/2 cups flour
    2 tsp baking powder
    1/2 tsp salt

Directions

Preheat the oven to 350.
Cream the dairy free spread and sugar for 5 minutes or until fluffy.
Mash the tofu.
Add the mashed tofu and vanilla to the creamed mixture and mix well.
Sift the flour, baking soda, and salt into the mixture and mix well.
Roll into 40 balls.
Place on ungreased cookie sheet and flatten each ball with your hand. Be sure to flatten to the thickness you desire as the dough will not rise much.
Bake for 10 minutes.

We like these cookies frosted but that is not included in the nutritional information.
