Introduction

Ingredients

    1. 6 hard-boiled eggs
    2. 1/3 c. of low fat plain yogurt
    3. 1/4 c. olive oil mayonnaise (or light, but I think olive oil tastes better!)
    4. 1 medium green onion, chopped
    5. 1/2 tsp. paprika
    6. 1 tbsp. WHITE vinegar
    7. 1/4 tsp. salt
    8. pickle relish to taste

Directions

1. Peel and slice up eggs.
2. Add all ingredients.
3. Add pickle relish if you like an extra crunch and tang.
4. Makes 10 quarter-cup servings.
