5 Sweet potatoes, peeled
1 large egg
4 fl oz. Half and Half Cream
½ tsp. Allspice
1 tsp. Cinnamon, ground,
¼ tsp. Nutmeg, ground
1/8 tsp. Cloves, ground
¼ cup Brown Sugar, packed
1 large orange, juiced
1 cup Pecans, chopped
½ cup Coconut, unsweetened, shredded
¼ cup Wheat flour, white, all-purpose, unenriched
1 tsp. Vanilla Extract
4 Tbs. Butter, unsalted
1 tsp. grated orange zest (do not include the white pith, which is bitter)
Directions
Preheat oven to 350°F.
Cook or steam the potatoes until tender. Mash the potatoes, and then stir in melted butter. In a bowl, beat the eggs, then add brown sugar and beat thoroughly. Stir into mashed sweet potatoes, and then add cream, vanilla, allspice, cinnamon, nutmeg, cloves, coconut, flour and juice from an orange and orange zest and mix until well blended. Place the mixture into a 91/2 x 13 inch baking dish. Sprinkle the top of the pone with chopped pecans. Cover with foil and bake for 30 minutes; uncover, then bake for 10 minutes.
