    Mushrooms, fresh, 24 medium
    Tomatoes, 24 wedges (1/4 of medium tomato)
    Zucchini, 1 cup, large slices
    Onions, 3 medium cut into wedges
    8 skewers

    Extra Virgin Olive Oil, 4 tbsp
    Lemon Juice, 2 lemon yields
    Oregano, dry, 2 tsp
    Thyme, fresh, 1 tsp
    Garlic, 4 cloves minced


Combine marinade with whisk.
Marinade vegetables for at least 2 hours, then thread onto skewers and grill at 400 F for 5-8 minutes or until tomato begins to char. Can also be done of the BBQ.
If you are using wooden skewers, be sure to soak them in water for at least an hour before use.
