Ingredients

1/2 cup caramel ice cream topping
2 tbsp caramel ice cream topping
1 ready made graham pie crust- 10 inches
1/2 cup pecan halves
1 cup rice milk (or skim milk for the same calorie count)
2 packages vanilla flavored pudding mix- 3.4 oz boxes
1 cup canned pumpkin
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1.5 cups cool whip free
1/2 cup cool whip free
Directions
**cut 8" pie crust into 8 pieces, or 10" crust into 10 pieces. ingredients fit best in a 10" crust**
-Pour 1/2 cup caramel ice cream topping into ready made graham pie crust.
-Top caramel with majority of pecan halves, leaving some to sprinkle on top of the pie.
-In a mixing bowl, use a whisk to combine milk, pudding mix, pumpkin, and spices.
-Once blended, stir in 1.5 cups cool whip.
-Spread mixture into crust over pecans and caramel.
-Let sit in fridge for at least 1 hour.
-Just before serving, top pie w/remaining 1/2 cup of cool whip. Scatter remaining pecans halves and drizzle 2 tbsp of caramel over pie.
