Introduction

Ingredients

1.5 C chopped celery
317grams turkey meat from bone (after it was boiled, I weighed the meat that I got off the bone, so this amount will be different every time you make the soup)
4T dry onion soup base
1 chicken bouillon cube
8 large carrots sliced (approx 1.4 lbs)
18 cups water
Directions
Place turkey carcass (no skin), water, onion soup base, bouillon cube and chopped celery in large soup pot with cover. Bring to boil, cover, lower heat to simmer for about 2-3 hours.
Take carcass out of soup pot and put on plate and let cool slightly.
Put carrots into soup pot, keep simmering.
Start a pot of water to cook pasta if desired for the soup.
Remove meat from bone. By the time you do this (about 30 min) the carrots will be cooking. Add the meat back into the soup pot.
Cook pasta if desired, and drain. Do not add the pasta into the soup, just add pasta to your bowl as you put the soup into the bowl so that you can regulate how much pasta you want (you'll have to add the pasta calories separately - pasta is about 200cals per cup).
Recipe makes 16 cups soup (some of the water you started with cooks off over the 2-3 hours).
