Introduction

Super easy soup/stew...just throw in the ingredients and cook for 20 minutes! Tastes wonderful when served with part-skim mozzarella cheese or fat free cheddar on top and some tortilla chips. Ingredients

    1 lb. extra lean ground beef
    1 can Ranch Style beans (can substitute Black Beans if you like - I've made both ways and they both taste great)
    1 can Ro-Tel (I use Mild but use hot if you like things spicy)
    1 can Minestrone Soup
    Salt and Pepper to Taste
    Cheese and Tortilla Chips optional

Directions

Brown lean ground beef and drain excess fat. Stir in Ranch Style beans, Ro-Tel, and Minestrone Soup and cook on Med to Med-High (keep it at a light boil) covered for 20 minutes. Serve by itself or garnish with chips and cheese.
