This is nutrtionally sound, very yummy and filling, and have a sweetness to it that satisfy my cravings for exotic meals without using too many of my calories, serve it with whole grain rice or plantain, and a fresh salad, tomato or cucumber are refreshing and perfect for compensate this hot dish. Ingredients

    * Onions, raw, 2.5 cup, chopped (remove)
    * Soybean Oil, 3 1tsp (remove)
    * Soybeans, mature seeds, cooked, boiled, with salt (1 cup, 172 grms), 2.5 cup (remove)
    * Cilantro, raw, 6 tbsp (remove)
    * Garlic, 6 cloves (remove)
    * Thai Chili Sauce, 3 tbsp (remove)
    * Pumpkin, cooked, 1.5 cup, mashed (remove)
    * Beef bouillon, 1 cube (6 fl oz prepared) (remove)
    * Salt, 0.33 tsp (remove)
    * *Peppers, sweet, red, fresh, 0.5 cup, chopped (remove)
    * Pepper, black, 0.33 tsp (remove)
    * *Cumin seed, 1 tsp (remove)

Directions

1.- First prepare all your ingredients and reserve, this means, cook and smash your pumpkin, chop and mince your veggies, and of course cook the beans in advance.

2.- Heat oil in a deep pan, and add the onion first, when is slightly "transparent" add the garlic and the bell pepper, mix over medium heat.

3.- Add the spices and salt, including the bouillon.

4.- Add the beans and cup mixing often for 5 minutes or so.

5.- Add the chili sauce, i use a sweet mild chinese one and the pumpkin pure, mix over low heat for 5 minutes more.

6.- Add half cup of water or more if you want a thinner mixture and bring to boil for 5 minutes.

7.- Adjust spices if needed, mix well, turn off the heat and add the finely chopped cilantro, and enjoy, i loved how this culinary experiment turned out.
