Introduction

This is a recipe I adapted to lower the fat and calories (and prep time) by leaving out the crust... my husband said it was great and would eat it again, he liked it so much he ate two portions! It also keeps well in the fridge for a few days and reheats well in the microwave, so makes a great quick, filling breakfast! Could easily substitute ham for any other ingredient (such as veggies) to lower fat and calories further. Ingredients

    1 1/4 cup egg substitute (such as Egg Creations or Egg Beaters, or use real eggs)
    1 - 2 green onions, diced, or herbs of your choice
    1 cup lean diced ham
    1 cup part-skim cheddar cheese, shredded
    1 cup skim milk
    1 tbsp dijon or deli mustard
    salt & pepper to taste

Directions

1. Preheat oven to 400F
2. Spray 9" pie plate with nonstick spray
3. Mix all ingredients in large bowl.
4. Pour into pie plate
5. Bake 40 - 45 minutes or until filling is set and edges are golden
6. let stand 10 minutes before cutting
7. Cut into quarters and enjoy!
8. Refrigerate leftovers for quick and easy breakfast. Just reheat in microwave 60 - 90 sec.
