Ingredients

    1/2 c. Golden Raisins
    1/2 c. pittted dried Dates chopped
    1/2 c. dried figs, chopped
    1/2 c. dried apricots, chopped
    3 Tbsp. Apple Juice
    3/4 c. Wheat flour, white, all purpose
    1/2 tsp. cinnamon
    1/2 tsp. nutmeg
    1/4 tsp. allspice
    1/8 tsp. baking soda
    1/8 tsp. Baking powder
    1/4 c. honey
    1 Tbsp plus 1 tsp. olive oil
    3 Tbs. packed dark brown sugar
    1/2 egg, beaten (about 2 Tbsp.)
    1/2 cup powder sugar
    2 tsp. lemon juice

Directions

Makes 24 cookies with only 79 calories.

1. In a large bowl, combine dried fruit and apple juice. Cover and let stand at room temp.overnight or until liquid is absorbed.

2. Preheat oven to 350. Line a large baking sheet with parchment paper. In a bowl, combine flour, spices, baking soda, and baking powder. Set aside.
3. In another bowl, beat honey, oil, and brown sugar. Mix in the egg. Add flour mixture and dried fruit and blend just until flour is no longer visable. The mixture will be thick and sticky.
4. Drop 12 spoonfuls of the dough onto the prepared baking sheet, spacing them about 1 inch apart. Bake 12 to 15 mins. or until cookies are just firm in the center. Remove from oven and let cool. Repeat with remaining dough.
5. In a small bowl, combine powder sugar and lemon juice and stir until smooth. Using a teaspoon, drizzle icing over cookies in a zig-zag pattern. Allow icing to dry for about 10 mins. Store in a single layer in an airtight container for up to one week.

Remember 1 cookie is only 79 calories and 1 gram fat.
