Introduction

This is a great Vegan dish and I love it. Add your favorite dairy free dressing and it is so good even the kids will eat it. This is a great Vegan dish and I love it. Add your favorite dairy free dressing and it is so good even the kids will eat it.

Ingredients

    4 Cups Fresh Spinach Leaves
    1 Cup Cucumber, peeled and chopped
    1 Cup Carrots, shredded
    1 Cup Celery, diced
    1 Cup Red Apple, chopped
    1 Cup Unsalted Walnuts, chopped
    Any Non Dairy Dressing of your choice

Directions

Mix Ingrediants in large mixing bowl.
Use about 1/4 Cup of your dressing and mix that in or pour it on top. It is basically an apple waldorf salad, but with the Spinach added. The only thing this recipe lacks is Vitamin B-12.

  • Made dressing with Udo oil blend, apple cider vinegar, ginger, agave & a little Helman's olive oil mayo. Added raisins & salt. YUM! - 11/11/14
