Ingredients

3/4 cups whole wheat flour
3/4 cups all-purpose flour
2 tsp baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 Tbsp poppy seeds
2 Tbsp non-hydrogenated margarine
1/2 cup sugar
4 egg whites, lightly beaten
1/2 cup applesauce
1 cup buttermilk or low-fat plain yogurt
1 Tbsp lemon zest
1/4 tsp almond extract (optional)
Directions
1. Preheat oven to 375°F.
2. Whisk together the flours, baking powder, baking soda, poppy seeds, and salt and set aside.
3. In a large mixing bowl, cream margarine, applesauce and sugar together, beating until fluffy. Add egg whites one at a time, beating until incorporated after each one. Beat in the lemon zest.
4. Beat in one half of the dry ingredients until just incorporated. Beat in one third of the buttermilk. Beat in half of the remaining dry ingredients. Beat in a second third of the buttermilk. Beat in the remaining dry ingredients and then the remaining buttermilk. Do not over beat.
Makes 6 large muffins, or 8-12 smaller muffins.
