Ingredients

    1 tablespoon olive oil
    1 cup finely chopped onion
    1 cup finely chopped celery
    1 cup finely chopped carrots
    1 ½ teaspoons minced garlic
    1 pound lean ground beef
    1 pound lean ground pork
    1 cup red wine
    ½ teaspoon salt
    ½ teaspoon pepper
    ½ teaspoon ground nutmeg
    1 bay leaf
    1 2/3 cups beef broth
    1 10 ¾ ounce can tomato puree
    1 cup milk
    14 oz package of rotini

Directions

Heat the olive oil in a very large saucepan or medium stockpot over medium heat. Add vegetables and garlic, then cover and cook for 8 minutes, stirring occasionally. Remove vegetables and brown the ground meats. Add wine, salt, pepper, nutmeg and bay leaf and simmer for 5 minutes. Put the vegetables back in the pot and add the beef broth and tomato puree. Simmer for an hour, stirring when you’re close to it. Stir in the milk and simmer for another 20 minutes. Sprinkle in a touch more nutmeg & red wine if you have the urge. Throw out the bay leaf and serve over cooked rotini.
