Introduction

Number of Servings: 12

Ingredients

    2 cups all-purpose flour
    3/4 cup sugar
    2 tsp baking powder
    1/2 tsp baking soda
    pinch of salt
    1/2 tsp cinnamon
    1/8 tsp nutmeg
    1/4 cup canola oil
    2/3 cup nonfat (skim) milk
    1 egg lightly beaten
    1 tsp vanilla
    2 small ripe bananas, mashed

Directions

Preheat oven to 350 degrees. Coat a 12 cup muffin pan with cooking spray.

In a large bowl, stir flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg together. Make a well in the center.

In a medium bowl, combine oil, milk, egg and vanilla. Add to dry ingredents. Mix. Add mashed bananas, stir until just combined.

Fill cups 3/4 full. Bake for 18-22min.

Serving size 1 muffin. Makes 12
