Ingredients

1 tbsp Sour Cream, reduced fat
1 large Egg, fresh, whole, raw
1 tbsp La Victoria Salsa Ranchera, Hot
2 tbsp chopped Onions, raw
2 tbsp Green Peppers (bell peppers)
0.33 cup, chopped or sliced Red Ripe Tomatoes
2 tortilla, medium (approx 6" dia) Corn Tortillas
0.50 tbsp Earth Balance Soy Garden Buttery Spread
Directions
In a skillet melt the buttery spread. Add onions and bell peppers and sweat about 5 min. Add tomatoes and salt, cook another 2 min. Stir in Ranchero sauce and hot sauce and bring to a simmer, about 3-4 min. Crack egg into the simmering sauce and let cook to desired hardness. Warm tortillas over flames of a gas stove or in the oven wraped in foil. Place one tortilla in the center of the plate and pour egg and sauce over the tortilla. Top with sour cream and serve with other tortilla.
